Healthy, Energy-Boosting Recipes For The Singer On The Go!

As they say, it's all in the planning! Here are a couple fun and filling recipes that you can prepare and cook ahead of time. Just reheat before your busy schedule has you off to another audition or show!

Winner Winner, Easy Chicken Dinner

6 oz boneless chicken breast (strips or thin breast)
Dash of salt and pepper to taste
¼ tsp basil
¼ tsp tarragon
4 oz canned or fresh, unsalted, chopped tomatoes
1 oz tomato paste
½ of a Vidalia onion, chopped
1 cup yellow and red pepper, diced
½ cup water
Whole-wheat pasta

-Coat or spray large saucepan with olive oil, put on medium heat, and add the Vidalia onion, red, and yellow pepper until soft. Add chopped tomatoes, 1/2 cup of water, and mix in tomato paste. If it's not thick enough, add a little more tomato past until you get the right consistency. Set aside.

-If using the pasta, follow package directions and cook.

-Coat or spray skillet with olive oil and put on medium heat. Add chicken and sprinkle with salt, pepper, basil, and tarragon. Cook for about 3 to 4 minutes on each side.

-Serve chicken over the pasta and add as much of the tomato sauce as desired. 

-Put aside 2 - 4 oz of the chicken and extra sauce for another day.

Bright and Sexi Shrimp

Shrimp is my favorite staple food to keep in the freezer. Use your leftovers from the previous dish to create a whole new meal!

2 oz Shrimp
½ tsp fresh lemon
1 fresh basil leaf- broken into a couple of pieces
1 tsp olive oil

Thaw shrimp and put on a low heat skillet with olive oil. Turn and mix continuously for about 4 minutes. Add over pasta and the homemade sauce from the chicken dinner. Top with lemon juice and fresh basil. Voila!
